Panera Bread’s lemon drop cookies are some of the most delicious out there. They are perfect for dessert lovers but not so perfect for anyone following a healthy diet. So, I had to intervene (with my detox ingredients) and make this delicious cookie guilt-free for all.
This healthy Panera Lemon Cookies recipe contains far fewer calories and carbs than the original, with a bonus of 6x more fiber and double the protein. The cookie base turns out equally soft with ready-for-a-bite crispy edges. Though the flavor goes perfectly with the afternoon tea, you can always load your cookies with fresh lemon zest or juice for extra vitamins and minerals.
It’s an easy Panera lemon cookie recipe that requires no fancy kitchen equipment. You don’t even need the dough chilling time, as our DD Swaps hold it together well in the oven without the extra chill step.

I wanted to create a soft, chewy cookie with a refreshing lemon flavor, just like the Panera Lemon Drop Cookie I remember as a kid…but without the preservatives and the carb overload. I used one of the “copycat” recipes online as inspiration and used the ‘Sweet Swaps’ to create a clean yet delicious version of this classic.
I just swapped the wet and dry ingredients in these recipes with Detox Swaps at a 1:1 ratio. I reconstituted the Egg Swap with ½ cup fresh lemon juice to add an extra kick of lemon. Plus, we use a lot of lemon zest in this recipe, so any more lemon extract is just optional.
This Panera lemon cookie tastes awesome without the white chocolate chips, but feel free to add them for the closest replica to the original recipe. The Powdered Sugar Swap adds the signature sugar-dusted look to the cookies without actually adding any sugar.
I made this gluten-free Panera lemon cookie recipe with both Whole-Grain and Grain-Free Flour Swaps, and the results were equally amazing. The Whole-Grain cookies pack a few extra healthy carbs and a hearty, earthy flavor, while the Grain-Free Swap cookies are perfect for a low-carb or Keto/paleo version. If you don’t mind having a small amount of dairy, Lily’s white chocolate chips are sugar-free and bake great in these cookies. But if you absolutely can’t have dairy, the GoDarkChocolate brand is excellent.
1. Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper for easy clean up.
2. Mix dry ingredients together well.
3. Add wet ingredients and blend using a large spoon, electric hand mixer or stand mixer until no lumps remain.
4. Let the dough rest for a few minutes, then mix again or knead the dough with clean hands (my preferred method) for 1-2 more minutes. The finished cookie dough should be smooth and thick.
5. Fold-in sugar free white chocolate chips if desired.
6. Use your small cookie scoop to make equal sized dough balls, roll between your hands, then press each cookie on the parchment lined cookie sheet. The cookies will expand as they bake but they won’t spread much so flatten each cookie down to the approximate thickness you want for your finished cookie.
7. Bake for about 9 minutes (both Whole Grain and Grain-Free cookies baked the same amount of time in my oven) until the edges start to turn slightly golden and the tops start to crack.
8. Remove from the oven and cool on the cookie sheet for a few minutes before transferring to a wire rack to completely cool.
9. Once the cookies are at room temperature, coat each cookie in Powdered Sugar Swap.
10. For best taste, texture and health benefits, refrigerate all Detox Desserts overnight before indulging. Store covered in the fridge for up to 1 week or freeze for long term storage.

*An important note on carbs
Net carbohydrates are the sum total of carbohydrates that convert into glucose (therefore raise blood sugar) in the body. Anyone following a keto or diabetic diet should count net carbs NOT total carbs. To determine net carbs, simply subtract the fiber and sugar alcohols from the total carbohydrates on the nutrition label. Sugar alcohols are considered "carbs" for nutrition labeling purposes but our cells can't use them as energy which renders them inert in the human body. Thus, they are reduced from the total carb count. Fiber also counts towards the total carbohydrates for labeling purposes, but it is roughage. It stays in the intestines, doesn't absorb and isn't used as energy or converted to glucose in the body. Thus, fiber is also reduced from the total carbohydrate count. Anyone who counts macronutrients (carbs, fats, protein) should always count net carbs, not total carbs.
