Chef Alex Colaianni of Whole Health Everyday shares his 3 favorite detoxed cookie recipes.

The Detox Desserts collaboration with the talented chefs at Whole Health Everyday has been nothing short of inspirational.  I’ve had the opportunity to taste the creative and versatile applications the Swaps provide and we’ve received glowing reviews from the chefs as they continue to detox some of their favorite recipes.  

Chef Alex writes, “Your hard work on these products shows through in their ease of use.  How fun it has been swapping my way through December treats.  Here are 3 recipes I recently detoxed.  Of the three, which were all great and easy to detox, the Coconut Quinoa Veggie ‘All-Day’ Cookies are my favorite. This one was derived from a morning glory muffin recipe and transformed to a cookie/bite application. I have been popping three or four of these an hour before my runs since they came out of the oven.”

Quinoa all day cookies

Detoxed Coconut Quinoa Veggie “All-Day” Cookies 
Yield : 24 


Ingredients: 
1 cup DD Grain-Free Flour Swap 
1 cup old-fashioned oats 
½ teaspoon baking powder 
½ teaspoon baking soda 
½ teaspoon cinnamon 
½ teaspoon sea salt 
½ cup cooked quinoa 
½ cup finely shredded carrots 
½ cup finely shredded zucchini, squeezed dry 
2 Egg Swaps 
½ cup almond butter 
¼ cup coconut oil, melted 
½ cup date syrup 
⅓ cup chopped toasted almonds 
⅓ cup roasted pepitas, unsalted 
½ cup dried unsweetened cranberries

Matcha Snowball Cookies 

Detoxed Matcha Snowballs 
Yield : About 40 cookies

 

Ingredients: 
3 ½ cups DD Whole-Grain Flour Swap 
1 teaspoon baking soda 
3 tablespoons matcha powder 
2 tablespoons vanilla
1 cup DD Butter Swap 
2 tablespoons almond butter 
2 cups DD granulated sugar swap 
1 tsp sea salt 
2 DD Egg Swaps 
1 cup DD Powdered Sugar Swap (in a small bowl with a fine meshed strainer)

Oatmeal Raisin Cookies 

Detoxed Oatmeal Raisin Walnut Cookies
Yield : 40 cookies


Ingredients: 
1 cup DD Butter Swap
1 cup DD Granulated Sugar Swap
2 Tbsp Molasses
2 DD Egg Swaps
1 Tbsp Vanilla
1 ½ cups DD Whole-grain Flour Swap
1 tsp baking soda
1 ½ tsp ground cinnamon
1 tsp ground ginger
1/2 tsp sea salt
3 cups old-fashioned oats
1 cup golden raisins
1/2 cup chopped toasted walnuts, chopped
