Who doesn’t love a soft, chewy cinnamon spiced cookie?  The sweet buttery flavor still comes through the cinnamon and there is a subtle tang from the cream of tartar which is an acid that reacts with the baking soda to give them more rise.  These are deliciously simple cookies that take only a few minutes to whip up using basic ingredients you probably already have in your kitchen.

Two big detoxed cookies made with Grain-Free Flour contain 290 calories, 11 grams of fiber (38% of the daily!), 9 grams of protein and only 4 grams of slowly digesting net carbohydrates to maintain focused energy and keep you satisfied.  Compare that with the same serving size of traditionally made snickerdoodles which contain 370 calories, 3 grams of fiber, 3 grams of protein, 25 grams added sugar and 50 rapidly digesting net carbohydrates to spike blood sugar and insulin levels.




Dry Ingredients:
2 ¾ cups Flour Swap
1 ½ cups Sugar Swap
1 teaspoon salt
1 teaspoon baking soda (double for Grain-Free)
1 teaspoon cream of tartar
2 teaspoons cinnamon


Wet Ingredients:
1 cup Butter Swap
1 ½ Egg Swap (3 tablespoon Egg Swap mixed with ¾ cup hot water)
1 tablespoon vanilla extract
Cinnamon Sugar for rolling: ¼ cup Sugar + 2 teaspoons cinnamon


Directions:
Preheat the oven to 375 degrees (350 degrees for Grain-Free).  Line 2 cookie sheets with parchment paper.

Mix dry ingredients well then add wet ingredients and use an electric mixer to blend until smooth, thick cookie dough batter consistency is achieved.  Let the dough rest for a few minutes then mix again for 1-2 minutes.  Use your medium sized cookie scoop to make equal sized dough balls, roll each ball in your hands then completely coat each ball in the cinnamon sugar.  Press each cookie down on the parchment paper.  Sprinkle any remaining cinnamon sugar on the tops of the cookies before baking.
  
Bake for about 10 minutes (8-9 minutes for Grain-Free) until puffed and slightly golden on the edges.  Remove from the oven and allow to cool on the cookie sheet until they are cool enough to transfer to a wire rack to cool completely. *For best taste, texture and health benefits, refrigerate all Detox Desserts overnight before indulging.  Store covered in the fridge for up to a week or freeze for longer term storage.
