There are 2 brands of naturally dyed, sugar-free sprinkles on the market. The first is “People’s Keto” and second “Good Dee’s”, you can find both on Amazon. I hope to produce my own line of naturally dyed superfood sprinkles for Detox Desserts soon! These cookie bars use simple sugar cookie ingredients and can be whipped up in 15 minutes using basic ingredients you probably have in your pantry. I’m always heavy handed with the vanilla extract but these dense and chewy cookie squares also taste amazing with a combination of vanilla and lemon extract for a bright and cheery summertime treat. These are great topped with keto vanilla ice cream or a scoop of high protein yogurt.
Directions:
Preheat the oven to 350 degrees. Line a 9x12” rectangular pan with parchment paper and grease well.
Mix dry ingredients well then use a hand mixer to incorporate wet ingredients until thick cookie dough batter consistency is achieved. Allow the dough to rest for a few minutes then mix again. Fold in the sprinkles, then press evenly into your parchment lined pan.
Bake for about 22-26 minutes until the edges turn golden. Start watching your cookie bars at about 20 minutes so they don’t over-bake. Remove when done and cool on a rack before slicing.
*For best taste, texture and health benefits, refrigerate all Detox Desserts overnight before indulging. Store covered in the fridge for up to 1 week or freeze for long term storage.
