These creamy lemon bars are a delightful balance of sweet and tart.  The crumbly shortbread crust is the perfect bed for the light and creamy lemon custard.  Quick and simple to make but look elegant when sliced and plated.  Even the lemon haters out there will be pleasantly surprised when they bite into these healthy sweet treats.  One full cup of lemon juice in these bars provides a powerful dose of Vitamin C and citric acid which maximizes the amount of iron your body absorbs from your diet, preventing anemia. Citric Acid is also important to prevent kidney stone formation.  Lemons are very low in carbohydrates so these bars are both keto and diabetic friendly when made with the Grain-Free Flour Swap.

Shortbread Crust Ingredients:
1 ½ cups Flour Swap
¾ cup Sugar Swap (granular)
¾ cup Butter Swap
½ teaspoon salt
1 Tablespoon vanilla extract
1-4 tablespoons hot water (as needed to crumbly consistency)

Lemon Custard Ingredients:
1 cup lemon juice
3 Egg Swaps
1 cup Sugar Swap (granular)
⅓ cup Flour Swap
Zest from 1 large organic lemon
1 teaspoon baking powder (no need to double for Grain-Free)

Lemon Bars


Preheat the oven to 350 degrees.  Line a 9x9” pan with parchment paper.
Make the shortbread crust by mixing the Flour Swap, Sugar Swap and salt well.  Then add Butter Swap, vanilla extract and 1 tablespoon hot water. Use clean hands or a fork to mix the dough well, it should be crumbly but stick together when pressed.  Add more hot water as needed for consistency.  Press evenly into the parchment lined pan and place into the oven. Par-bake the crust for about 8 minutes. Watch the crust closely and remove from the oven when it starts to turn golden.  Prepare the lemon custard while the crust is cooling.

Whisk together all the ingredients of the lemon custard until smooth and pour onto the par-baked crust.  Return to the oven and bake for 30-35 minutes until done.  Remove from the oven and cool completely before transferring to the fridge to set overnight.  They will continue to firm up in the fridge.  Slice and serve.  Top with a sprinkle of Powdered Sugar Swap or coconut whipped cream.
