The warm chai spices add a sophisticated edge to this classic sweet bread.  I found a 5-star zucchini bread recipe online and swapped organic pumpkin puree for the oil and added the chai spices.  Pumpkin is a healthy way to add moisture with fewer calories, more fiber and extra vitamins.  This veggie packed bread bakes up so sweet and moist, you’ll never know it’s not loaded with fat and sugar.  Feel free to half the recipe and only make 1 loaf, but bringing a fresh loaf to a friend or neighbor is a heartwarming way to remind them they are loved:)  I typically bake loaf style sweet breads with the Whole-Grain Flour Swap to get more lift, so remember to bake this in a larger pan if you choose to make it with the Grain-Free Flour Swap.  Top this bread with a scoop of high protein yogurt and you’ll have a completely balanced and low calorie macro meal!

Dry Ingredients:
3 cups Flour Swap
2 cups Sugar Swap
1 teaspoon salt
1 teaspoon baking soda (double for Grain Free)
1 teaspoon baking powder (double for Grain Free)
1 ½  tablespoons cinnamon
2 teaspoon ginger
½ teaspoon cardamom 
¼ teaspoon cloves 
Wet Ingredients:
1 can pumpkin puree
2 tablespoons vanilla extract
2 Egg Swaps
2 cups finely grated zucchini (2 medium sized zucchinis- no need to drain moisture)
1 heaping cup chopped walnuts

Preheat the oven to 325 degrees.  Grease 2 loaf pans well.

Mix dry ingredients well then add pumpkin, vanilla extract and Egg Swaps.  Use a hand mixer to blend well until smooth batter is achieved.  Fold in the chopped walnuts and grated zucchini.  Load both loaf pans and smooth the tops.  

Bake for 45-60 minutes until edges are golden and toothpick comes out clean.  If making this Grain-Free, I recommend baking in 2- 8x8” pans so the batter can be spread thinner to allow the moisture to reduce more efficiently.  

Remove from the oven and allow to cool completely on a rack before inverting the loaf to release.
