There’s nothing like a warm apple fritter on a cool morning.  These are loaded with fresh apples and have a soft, cinnamon spiced center.  Apples, though a commonly eaten and seemingly simple fruit, are actually loaded with health benefits.  Eating them is linked to a lower risk of many chronic conditions such as diabetes, heart disease and cancer. Even though there is no oil or fat in these fritters, we are able to achieve the crispy browned exterior by using the broiler at the end of the baking process.  I like a double layer of glaze for an extra kick of sweet and I recommend using an air fryer to reheat them before indulging.  You could also use a mini muffin pan to make smaller fritters (with less baking time) but I was going for a detoxed version of the old school large fritters my grandpa used to get us at the donut shop.

Baked Apple Fritter  

Dry Ingredients:
1 ½ cups Flour Swap
½ cup Sugar Swap
2 teaspoons baking powder (double for Grain-Free)
2 teaspoons cinnamon
¼ teaspoon nutmeg
½ teaspoon salt
 
Wet Ingredients:
1 Egg Swap or skip the swap and use ½ cup fresh apple puree to intensify the apple flavor
⅔ cup plant milk
1 Tablespoon vanilla extract
2 medium sized apples peeled and diced
 
Glaze Ingredients:
1 cup Powdered Sugar Swap
½  teaspoon vanilla extract
1-2 pinches salt
2+ tablespoons hot water to consistency (melted butter or Butter Swap is also an option for a richer flavor)

Directions:

Preheat the oven to 350 degrees.  Line baking sheet with parchment paper.

Mix dry ingredients well then add wet ingredients and mix well until smooth batter is achieved.  Let the batter rest while you peel and dice the apples.  Stir in the apples and use your extra large cookie scoop to make about 9 large fritters.

Bake for 23-26 minutes (30-35 minutes for Grain-Free). Remove from the oven and let cool while you whisk together all glaze ingredients.   

You’ll want a drippy glaze consistency so add more hot water 1 tsp at a time if needed.  Dip each fritter in the glaze while they are still warm then put back in the oven on high broil.  Watch them closely and let them broil until browned, this takes 2-4 minutes.  Remove from the oven, cool slightly then use a basting brush to re-glaze with remaining glaze making sure you fill every crack.  Transfer to a wire rack to let the glaze harden.  

*For best taste, texture and health benefits, refrigerate all Detox Desserts overnight before indulging.  Eat them warm but store covered in the fridge for up to 5 days.  Reheat in the air fryer for a sweet crispy exterior and a soft, warm center.
